Lamprais

Try  out the lamprais, a tasty  Dutch variation of the rice and curry theme!

Lamprais a popular  Sri Lankan dish is a dumpling of rice mixed with meat and vegetables cooked in beef stock. Wrapped in a banana leaf , the rice is later baked in a low oven, which gives it a characteristic aroma and  appetizing flavour.  Lamprais is thought to have evolved from the popular Dutch berger dish  that was popularised in the island nation during Dutch exploration and colonialism in the 16th and 17th Centuries.

Kottu Roti

Made from wheat roti and  spiced vegetables, egg, or meat, and various spices, kottu roti forms a tasty dinner meal .  Made on a heated iron flat pan, kothu is chopped and mixed using two blunt metal blades, which creates a very distinctive sound that can be  heard  in all  roadside restaurants in Sri Lanka. From being a cheap, takeaway meal for the lower classes, it has become a favorite mid night snack of night clubbers and party goers in Sri Lanka.

Hoppers


Hoppers, or Appa, as they are known locally is one of the most popular breakfast items in Sri Lanka. Made from a fermented batter of rice flour and coconut milk with some palm toddy, which is added for fermentation. The batter is left to rise when it is pored into a pan with deep bottom.

There are many types of hoppers  including plain hoppers, milk hoppers, egg hoppers,  in addition to the sweet hoppers like vanduappa and paniappa.ppam. Most of the food items in Sri lankan cuisine draws its influences from the South Indian states like Tamil Nadu, Kerala.

Rice & Curry



Rice & Curry is the staple food of Sri Lanka, where you can sample some of the spiciest foods in the world. Curries are prepared using meat, fish or vegetables, which are flavored using sliced onions, green chilies, black pepper, cinnamon, cardamom, cloves, nutmeg and saffron. Typically a  basic rice and curry of meat, most often chicken or fish but occasionally mutton,  two different vegetables, one portion of fried crispy papadam, the dish of spiced lentils of dhal and  fresh chutney dishes made of red onion, chili and grated.

Each bowl contains small portions,which is quickly refilled as and when it gets emptied as is the tradition in most Asian countries.
